Good explanation of the Glycemic Index (and why sambar is good for you)

There are three things that are good about sambar, a fiery lentil-based soup popular in south India. One, it's rich in protein and nutrients. Two, it has a low amount of easily-digested carbs ("bad carbs"). Three, like lentil-based soups in general sambar has lots of fiber. 

Because of the low amount of bad carbs and the high amount of fiber, sambar has a good Glycemic Index (GI) number. (A good GI number is a low one.) This is something that "The Healthy Indian Diet" book explains. More important than number of calories is where they come from

A recent New England Journal of Medicine paper by Harvard nutrition researchers and physicians has been getting a lot of attention largely because of how it links various habits and specific foods to weight gain and loss. The NY Times recently covered it with its thesis being that more important than number of calories is the source of those calories. 

In other words, 200 calories of wild-and-brown rice will affect our bodies differently than 200 calories of white rice, although the number of calories are the same, because of the the nature of brown rice (which has fiber and nutrients like whole grains in general) is different than the nature of white rice (which doesn't, thus making it an easily-digestible or "bad" carb). Why a place most associated with the Mediterranean Diet has an obesity problem

There's a fascinating NPR report about why Italy is now the most obese country in Europe. (Click here to read or listen.) According to a pediatrics and nutrition professor at the U. of Verona, 1 in every 3 teenagers are overweight or obese. The reporter visits the town Pioppi, near Naples, where Dr. Ancel Keys found some of the healthiest people he had studied and formulated the Mediterranean Diet. The reporter asks why this original epicenter of healthy eating is today having a near-epidemic of obesity.

I learned a comment I left in the alternative medicine debate at The Atlantic Monthly resonated with quite a few. Here it is.

[The] writer glosses over an important point as he was making a larger case for why alternative medicine is popular even among physicians (because it helps people feel better and establishes healing relationships). 

That important point is that there are well-studied, proven ways that help us stay healthy and can help prevent us from getting sick with modern disease (ie, heart disease, diabetes, and many cancers): Good diet, plenty of exercise, and doing things that reduce stress.

While you won't find it in our book -- it's created by Martha Rose Shulman, who's been featured in the NY Times and wrote the cookbook "The Very Best Recipes for Health" -- this recipe fits within the Healthy Indian Diet profile.
