
In it the journalist Nina Teicholz clearly explains the faults behind Dr. Ancel Keys research (which formed the basis of the anti-fat crusade), how food companies engineered low-fat foods people would actually eat (by adding sugars, worse than the dietary fats they replaced), and newer findings that show vegetable oils are really bad (as they easily oxidize under high heats, leading to inflammation which is at the root of heart disease and cancers).
The newest evidence is why I have begun advocating cooking your food in ghee, coconut oil or butter (not margarine or vegetable oils).
